No-Sugar Strawberry Ice Cream

Ingredients:
3 cups frozen strawberries
1 large ripe banana (frozen is best)
½ cup full-fat coconut milk (or any plant-based milk)
1 tsp vanilla extract
Optional: 1–2 medjool dates (if you want it a bit sweeter)
Instructions:
Add all ingredients to a high-speed blender or food processor.
Blend until smooth and creamy, stopping to scrape down the sides as needed. If the mixture is too thick, add a splash more coconut milk.
For a soft-serve texture, serve immediately.
For scoopable ice cream, transfer the mixture to a container and freeze for 2–3 hours. Let it sit at room temp for 5–10 minutes before scooping.
